Peach and Cream Cheese Pie (mom's recipe)

Crust:
8 Graham Crackers-crushed
3 T. Sugar
6 T. Butter, melted
1 tsp. Cinnamon ( I add this, but it wasn't in the original)
Mix together and press into pie shell. Bake at 350 degrees, 5-8 minutes.
Chill until completely cooled down.

Cream Cheese Filling:
3 oz. cream cheese-softened
dash of salt
1/3 C. Powdered Sugar
1 tsp. Vanilla
1 tsp. Almond (I add this, but it wasn't in the original)
1 C. Whipping Cream-whipped
Blend the cream cheese, salt, powdered sugar, vanilla, and almond together, then fold in the whipped cream.  Put in cooled pie shell and refrigerate.

Topping:
Cook and mash (2) peaches until liquid
Blend 1/2 C. Sugar with 3-4 T. cornstarch, add to peach mixture and stir.
Add 1 tsp.  Lemon Juice
Stir and cook until thickened and clear.

Add 3 sliced peaches to this mixture and cool.  When cool pour on top of pie and chill.

I double this sometimes and put in a 9x13 pan and cut into squares when serving.

~ Delicious Chocolate Bundt Cake~

Mix:

1 devil's food chocolate cake mix
1 large box chocolate pudding
5 eggs
1 cube butter, melted
16 oz (regular size tub) sour cream
1 tsp. vanilla
a pinch of salt

Then add:
2 cups chocolate chips

Bake in a bundt pan at 350 for 55 minutes.

This is SOO good. It doesn't even need frosting. I sprinkled powdered sugar over it to make it look nice.

{ MONSTER COOKIES }

INGREDIENTS:
  • 1 cup margarine, softened
  • 2 cups white sugar
  • 2 cups packed brown sugar
  • 3 cups peanut butter
  • 6 eggs
  • 1 1/2 teaspoons corn syrup
  • 1 1/2 teaspoons vanilla extract
  • 4 teaspoons baking soda
  • 9 cups rolled oats
  • 1/2 pound candy-coated milk chocolate pieces
  • 1/2 pound semisweet chocolate chips

DIRECTIONS:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together the margarine, white sugar, brown sugar, and peanut butter until smooth. Beat in the eggs, two at a time, then stir in the corn syrup and vanilla. Mix in baking soda and oats until well blended. Stir in the chocolate candies and chocolate chips. Roll dough into 2 inch balls, and place 3 inches apart on an ungreased cookie sheet. Flatten slightly with a fork.
  3. Bake for 12 to 15 minutes in the preheated oven. Cool on cookie sheets for a few minutes, before transferring to wire racks to cool completely.               


Super Yummy and makes TONS!!! I usually freeze some or share. Or...I have good intentions of doing those but eat them all instead! ha ha.

{ Mrs. Field's Chocolate Chip Cookies }

INGREDIENTS:
2 cubes butter, softened
1 1/4 C. White Sugar
1 C. Packed Brown Sugar
2 Eggs
1 tsp. Vanilla
3 C. Flour
3/4 tsp. Baking Soda
3/4 tsp. salt
1 C. Chopped Pecans (optional)
2 C. Chocolate Chips

DIRECTIONS:


Preheat oven to 350 degrees.


Beat butter and sugars (white & brown), then add eggs and vanilla. Whip 3-4 minutes. Add dry ingredients; Continue to beat with mixer. Add nuts and chips with spoon.
Bake at 350 for 10 minutes.
Do not overcook


Cool for 5 minutes before removing from cookie sheet

Muddy Buddy

9 C. Chex cereal rice
1 C. semi-sweet chocolate chips
¼ C. butter
1 tsp. vanilla
1 ½ c. powdered sugar
½ c. peanut butter

Melt chocolate, peanut butter and butter. Stir in vanilla and pour cereal. Add powdered sugar. Shake up in 2 gallon bag. Makes about 9 cups.

{ chocolate ice cream }

1 can (14 oz) sweetened condensed milk
1/3 cup Hershey's cocoa ( I usually put a little less because I don't like it too rich)
2 cups cream
1 cup milk
1 Tablespoon vanilla extract
1/4 tsp. almond (optional)

- In a med. saucepan cook sweetened condensed milk and cocoa on medium heat for about 10 minutes. Stir constantly. (If it becomes lumpy you can use a strainer)

Remove from heat and add cream, milk, vanilla extract, and almond extract.

Place in tupperware and place in freezer until it is cold and the sides harden up a bit.

Put in your ice cream maker and enjoy!

So good with homemade cones!

{ RICH LEMON BARS }

{CRUST}

1- 1/2 C. Flour
1/2 C. Powdered Sugar
3/4 C. Margarine or Butter

{TOPPING}
4 Eggs Slightly Beaten
2 C. Granulated Sugar
1 tsp.Baking Powder
1/2 C. Lemon Juice Concentrate
4 T. Flour

{DIRECTIONS}
1. Preheat oven to 350. In medium bowl, combine flour and powdered sugar; cut in butter until crumbly. Press onto the bottom of a lightly greased 13x9 pan; bake 15 minutes.

2. Meanwhile, in large bowl combine eggs, sugar, baking powder, lemon, and remaining flour; mix well. Pour over baked crust; Bake 20- 25 minutes.

3 Sprinkle with additional powdered sugar.

{ POPPYSEED CAKE }

3 C. flour
1-1/2 tsp. salt
1-1/2 tsp. baking powder
2-1/2 C sugar
1-1/2 C milk
1 C. oil
1/4 C. poppy seeds
3 eggs
1 1/2 tsp. vanilla
2 tsp. almond extract

{FROSTING}
3/4 C. powdered sugar (I use more to make it more like frosting)
1/4 C orange juice ( I use milk because I like it less tart)
1/2 tsp. vanilla
1/2 tsp. almond extract
2 TBS. melted butter

{DIRECTIONS}
1. Mix dry ingredients together; beat in milk, oil, eggs, poppy seeds, and flavorings. Beat until smooth. Put in greased and floured bundt pan. Bake at 350 for about 1 hour.
2. Blend sugar and other ingredients together for frosting. Pour on top of cake and let drip down.

Simple Vanilla Ice Cream

2 cups Heavy Cream
1 Cup Milk
3/4 Cup Sugar
3/4 tsp. Vanilla Extract

Mix half of the cream with the sugar over medium heat. Until sugar is dissolved.
Remove from heat and add the rest of the ingredients.
Chill in freezer until the sides are hardened.
Freeze in ice cream maker.

Hoey's Pumpkin Cookies

1 Cup Shortening
3 Cups Sugar
3 eggs
1 Can of Pumpkin (small)
4 1/2 Cups Flour
2 tsp Soda
2 tsp Baking Powder
2 tsp Salt
2 tsp Cinnamon
2 tsp Nutmeg
2 tsp Vanilla
1 pkg. Chocolate chips

Bake 10-14 min at 375

Apple Dumplings

Recipe: Apple Dumplings
Prep Time: 10 Minutes | Cook Time: 40 Minutes | Difficulty: Easy | Servings: 6

Ingredients
2 whole Granny Smith Apples
2 cans (8 Oz. Cans) Crescent Rolls
2 sticks Butter
1-½ cup Sugar
1 teaspoon Vanilla
Cinnamon, To Taste
1 can (12 Oz.) Mountain Dew Soda
Preparation Instructions
Peel and core apples. Cut each apple into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan.
Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour entire mixture over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.
WARNING: Prepare this dish at your own risk. It is beyond imaginable.

Chocolate Ice Cream

1 can (14oz) Sweetened Condensed Milk

Skotcharoos

2 Cups Sugar
2 cups Karosyrup
2 cups Peanut Butter

Rice Crispies

Bring Karo and Sugar to a boil for 40-60 seconds.
Pull off heat and add peanut butter.
Put in a 9x13 pan.
Top with 1/2 chocolate chips 1/2 butterscotch chips melted.

Orange Julius

6 oz Frozen Orange Juice
1 Cup Milk
1 Cup water
1/2 Cup Sugar (can reduce)
1 tsp. vanilla
8-9 Ice Cubes

Caramel Apple Dip

Caramel Apple Dip

2 c. sugar
1 c. butter
1 c. corn syrup
1 can condensed milk
1 c. cream
1 tsp vanilla

mix all together and boil for about 15 minutes or until it turns caramel color. Stir this constantly or it can burn. Note: you can microwave it 3 minutes at a time-stirring, microwaving another 3 minutes-stirring--repeat this about 5 times total.

Dip apples, pretzels, (chocolate covered ones from costco are great), marshmellows, etc.
